This cod recipe is easy, healthy, and delicious!
2 lbs. cod fillets, thawed
1 onion, diced
2 tablespoons coconut oil
1 clove garlic
2 cans tomato sauce (15.5 ounces, each)
1 bay leaf
1/2 teaspoon dried basil
salt and pepper to taste
Heat the coconut oil in a saucepan over medium heat. Once the oil is hot, add the onion and cook until tender. Add everything except for the fish, stirring to combine. Reduce heat, cover, and simmer for 30 minutes.
While sauce is simmering, preheat the oven to 350 degrees.
Place the fish fillets in an 8 ½” x 11” baking dish in a single layer. Pour the sauce over the fish and bake in the preheated oven for 35–40 minutes. When fish flakes easily, it is ready. Remove the bay leaf before serving.
